Edelblu Gourmet Stuffed Portobello Mushrooms

These Edelblu Gourmet Stuffed Portobello Mushrooms are a show-stopping appetizer or elegant vegetarian main. Earthy roasted mushrooms are filled with a savory blend of Edelblu Gourmet blue cheese, sautéed spinach, garlic, and breadcrumbs—creating a perfect harmony of bold, creamy, and comforting flavors.

Ingredients:

  • 4 large Portobello mushrooms, stems removed

  • 1 tbsp olive oil

  • 2 cloves garlic, minced

  • 2 cups fresh spinach, chopped

  • ½ cup panko breadcrumbs

  • 3 oz Edelblu Gourmet cheese, crumbled

  • ¼ cup grated Parmesan cheese

  • 1 tbsp fresh parsley, chopped

  • Salt and pepper to taste

Instructions:

1.  Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.

2.  Prepare mushrooms: Wipe mushrooms clean and remove stems. Brush both sides with olive oil, place gill-side up on the baking sheet, and season lightly with salt and pepper.

3.  Sauté the filling: In a skillet over medium heat, sauté garlic in a little olive oil until fragrant. Add chopped spinach and cook until wilted. Remove from heat.

4.  Mix the stuffing: In a bowl, combine spinach mixture, breadcrumbs, Edelblu Gourmet cheese, Parmesan, and parsley. Mix until evenly incorporated.

5.  Stuff the mushrooms: Spoon the mixture into each Portobello cap, pressing gently to pack it in.

6.  Bake for 20–25 minutes, until the mushrooms are tender and the tops are golden and slightly crisp.

7.  Serve warm as an appetizer or main course with a side salad or wild rice.
